This soup is hearty and goes well with breadsticks. It is a great stand-alone meal for those with bigger bowls!

"I used to work at Olive Garden - for a breif 2 weeks lol. I loved this soup. I have to say, this copy cat recipe comes dangerously close! I used hot italian sausage, which added a nice kick - but unfortunately lead to an unpresentable layer or red film atop my soup. Once, cooled, i was able to peal it away for the left overs... but make sure to drain appropriately if guests are comming. I also added some traditional itialian seasonings to the broth (Thyme, Marjoram, a bit of oregano, and a bay leaf)... it seemed like they would be needed. And they were. All in all, 5 stars. 1/4 teaspooncrushed red pepper; use only if a spicier flavor is desired
1/2 poundOwens Italian Sausage; crumbled
6 slicesbacon
1 eachwhite onion; diced
2 teaspoonsGarlic; minced
230 ounceschicken broth; (4 Large 49.5 oz cans and a 32 ounce box)
2 eachlarge baking potatoes; scrubbed, peeled in stripes, and cubed
1/2 cupheavy whipping cream
1 bunchkale; lightly chopped and packed, can substitute with escarole

Olive Garden Style Zuppa Toscana Wedding Soup Preparation

PREP:

Scrub potatoes and use peeler to peel off skin in stripes; Peel and dice onions; Open cans of Broth; Peel Kale leaves from the stalk and lightly chop, discarding the stalks.

In pan, saute Italian sausage until slightly browned. Add crushed red pepper ONLY if a spicier flavor is desired. Drain excess fat and place in bowl. Refrigerate while preparing other ingredients.

In same pan, saute bacon. Remove and crumble; set aside. Save 1 tablespoon of grease and use it to saute the onions, and garlic for approximately 15 minutes or until onions are soft and clear.

In pot, add broth and onion mixture; cook through until boiling on medium high heat.

Add potatoes and kale, cover, and cook on Medium High until soft..about 30 minutes.

Add cream, crumbled bacon, sausage; simmer 4 minutes and serve.

Serving Size: Approximately 1 1/2 cup

Notes

I modified this recipe to find that perfect match of the Olive Garden's flavor. This recipe takes a while to prepare, but is worth the time and effort.

    Our version of this soup is very similar except we use Hormel bacon bits or pieces, less mess and less time. We also use alot more potatoes and kale. My children love it!

    Wow! I felt like I was at Olive Garden eating this soup! Although, I did make a few changes... I was proactive reading the prior comments about this soup being bland so I added onion salt, garlic salt, white pepper and regular salt to the base. I added a bay leaf, extra red pepper and doubled the garlic. I only used about 35 ounces of chicken stock with 16 ounces of water. I will make this soup again and again with the changes I made.

    Try using chicken base with water instead of broth. It's more flavorful and cheaper.

    We loved it! Will definitely make again on a cold Colorado evening. Just as good if not better then Olive Garden. I used Red Cayenne Pepper instead of the crush red pepper flakes.
