Ingredients

2 cups Rolled oats (not instant or quick cook)
2 cups Lowfat milk or milk subsitute
1 teaspoon Lemon zest
1/2 teaspoon Vanilla
2 Appricots (or other fruit)
1/3 cup Nuts
2 tablespoons Agave nectar (optional)

Preparation

Combine oats, milk, lemon zest and vanilla in a bowl. Cover and refrigerate overnight. In the morning, stir in pine nuts, apricots and agave nectar.
