Chicken Parmesan

| 2 Eggs; whipped with 2 T water |
| 2 tablespoonsBread crumbs; any flavor |
| 1/3 cupParmesan cheese |
| 4 largePounded chicken breast **; cut into 2 long strips |
| 1/4 cupolive oil |
| 2 cupsPasta sauce |
| 2 cupsMozzarella; grated |
| 1/2 cupFlour |
Chicken Parmesan Preparation
1. Heat oven to 350F.
2. Mix egg and water. Mix bread crumbs, flour and Parmesan cheese. Dip chicken into egg mixture, then coat with bread crumb mixture.
3. Heat oil in 12-inch skillet over medium heat. Cook half of the chicken at a time in oil about 5 minutes, turning once, until light brown; drain. Repeat with remaining chickenl, adding 1 or 2 tablespoons oil if necessary.
4. Place half of thechicken in ungreased rectangular baking dish, 11x7x1 1/2 inches, overlapping slices slightly. Spoon half of the pasta sauce over veal. Sprinkle with 1 cup of the mozzarella cheese. Repeat with remaining chicken sauce and cheese.
5. Bake uncovered about 25 minutes or until sauce is bubbly and cheese is light brown.
** Place plastic wrap on your counter, lay chicken down and place another piece of plastic wrap on top of chicken. Take wooden or steal mallot and pound the chicken until thin and tender. Then cut in half....
NOTE: You may serve with spaghetti or even better Ziti noodles. Cook noodles as you would normally, then pour into the baking dish the add chicken and sauce then cheese. Delish!!
Also you may use Veal in place of chicken. Prepare it the same as you would the chicken.
If you're looking for a drink I alway recomend iced tea, but a nice wine is always welcome. Serve with garlic toast or wheat rolls.
If a desert is called for try a wonderfully hot cherry cobler!!
