2 Fat free flour tortillas
1/2 poundSweet potato
1/4 cupBlack beans; drained
1/4 cupReduced Fat Cheddar cheese
Chili powder; to taste
Cilantro; to taste
Salt; to taste
Cooking Spray; as required

Black Bean/sweet Potato Quesadillas Preparation

Peel sweet potato and chop into small pieces. Boil for about 10 minutes or until very soft. Drain and mash with a potato masher.

Lay out one tortilla. Cover with 1/4 cup mashed sweet potato, 1/4 cup black beans, 1/4 cup cheese, and salt, chili powder, and cilantro to taste. Cover with second tortilla.

Spray frying pan with a little fat-free cooking spray and fry your quesadilla a few minutes on each side, until cheese is melted and beans are heated through.

Notes

Note that 1/2 of a quesadilla is only 3 points. The only reason the whole quesadilla is 7 points and not 6 is because of the 4 g. "fiber cap"

    These are great! I read the reviews about needing more spice, so I added cumin, chili powder, and salt to the sweet potato mash and simmered the beans with some sauteed onions, green peppers, and cilantro. Served with lime-cilantro brown rice, pico de gallo, and sour cream. So good and filling!

    This was super quick and the kids and I enjoyed them!! I mashed the sweet potatoes with some cinnamon & sugar and then a bit of spicy seasoned salt. Then used red beans in chili sauce, drained well. Topped with shred cheese and it was a sweet and spicy delicious combo that I felt good about serving my kids!! Thank you for the great idea!!

    Don't forget to add the salt (which I did). I think it could have been spiced up a bit in other ways too.

    this was pretty good, I only made one with half a sweet potato and put lots of Cajun seasoning on it, it's just missing something though

    Delicious! I did add spices to the sweet potato mash - chili powder and paprika . Also added pickled jalapeƱos and some chicken. Turned out amazing !

    This was great! I added ground beef for more protein and corn. The sweet potato gives it fiber, bulk and sweetness. The family loved it.

    easy & yummy. added extra spice...cumin, etc. next time will add chipotle. served with rice & avocado/tomato salad on side. used 4 small sweet potatoes & a whole can of black beans- made four 8' quesadillas. I simmered the beans with the spices before adding.
