Pan-seared Beef with Garlic and Chili Sauce

This is an adaptation of the Thai dish "shaking" beef. Goes well with Sticky Rice (glutinous rice) or Boiled Rice and stir-fried vegetables. Great for a fast meal with some day before prep work.

Ingredients
| 3/4 poundSirloin Beef; cut into 1/2 inch thick slices |
| 1 teaspoonSesame Oil; maybe more |
| Garlic and Chili Dipping Sauce |
| 2 clovesGarlic; crushed |
| 1 tablespoonShoyu sauce; or tamari sauce |
| 1 teaspoonMuscovado Sugar; unrefined sugar |
| 2 eachRed chilies; deseeded and finely copped |
| 1 tablespoonLime Juice; fresh if practical |
Pan-seared Beef with Garlic and Chili Sauce Preparation
1. Beat the beef on both sides with a meat mallet to make it slightly thinner
2. Brush the beef with the sesame oil and set aside, can be done the day before for added flavor.
3. Mix together all the ingredients for the dipping sauce in a small bowl and set aside, also as before.
4. Place the beef on a preheated very hot griddle pan. For Medium Beef cook for about 1.5 minutes on each side until browned. Remove from the pan and let the beef rest for about 1 minute, then slice thinly into 1/2 inch strips.
5. Serve the beef with the dipping sauce.
