Simple and very nutricious, this is a mild soup that is easy to dress up with additional ingredients.

| 1 tablespoonolive oil |
| 1 largeOnion; chopped |
| 4 clovesgarlic; pressed |
| 1/4 headcabbage; chopped |
| 2 small stalkscelery; chopped |
| 2 largeCarrots; chopped |
| 2 cupsgreen beans; cut into 1" pieces |
| 1/2 teaspoonground thyme |
| salt and pepper; to taste |
| 6 cupslow-sodium veggie or chicken broth; (I used 3 of each) |
| 2 cansdiced tomatoes; undrained |
Basic Veggie Soup Preparation
In a large soup pot, heat the olive oil. Add the onion and saute until almost transluscent. Add the garlic and cook about 2 more minutes. Add the rest of the veggies and the salt, pepper, and thyme, and saute for 2 more minutes to lock in the flavor. Pour in the broth and tomatoes, stirring. Bring to a boil. Reduce the heat and simmer until tender.
