Tomato Pie

I don't even like tomatoes very much, but I really like this recipe!

Original recipe makes 0
1 pie crust 9"; (Pet Ritz brand), baked and cooled
1 1/2 cupsmozzarella; divided
3 tomatoes; peeled, thinly sliced (With large tomatoes, usually 1 or 2 does it)
1/2 smallvidalia onion; thinly sliced
3/4 cupmayo
salt & pepper; to taste
dry basil; to taste

Tomato Pie Preparation

Sprinkle small amount of cheese on bottom of cooled crust. Cover with layer of tomatoes, then onions. Mix the mayo, cheese, salt, pepper & basil. Spread over top. Bake at 350? for 30 to 40 minutes or until warm & bubbly.

Notes

Note: The crust has a tendency to burn the second time around in the oven. To prevent this, tear off thin pieces of aluminum foil and wrap around the exposed crust. Enjoy!
