Very tasty 'autumn' style main dish.

1.5 poundBone In, Center Cut Pork Chops; (1/2 to 3/4 inch thick)
2 mediumApples; cored and thinly sliced - cooking variety
1 largeOnion; sweet, very thinly sliced
2 tablespoonsExtra Virgin Olive Oil
2 tablespoonsButter
1 tablespoonLemon juice

Autumn Pork Chops Preparation

In large nonstick skillet over medium heat add Olive oil and 1 T butter, brown chops on both side, seasoning with salt and pepper and a bit of spice/herb mix from below. Remove chops from pan. Add remaining butter melt then add onions stir cooking for 2 minutes. Add apples and lemon juice and cook for 2 minutes mixing well with onions. Create 'wells' and return pork chops to pan cover and cook until chops are done and apples are tender but not mushy. Serve pork chops with apples and onions on top.

spice/herb mix: I crushed using my mortar & pestle approximately 1 Tbsp dried Thyme, 1 1/2-2 Tbsp dried Rosemary and 1/4-1/2 tsp poultry seasoning.

Note: This will make more than you need for this recipe, but is good with other things.

Notes

Boneless chops could be used for this, cooking time may need to be adjusted.

I used red delicious apples since that is what I had on hand.

This is an easy and delicious recipe. Great for a weeknight but nice enough for company. I used some infused garlic evoo instead of plain evoo when I sautéed the chops. I also substituted Braeburn apples for the Golden Delicious; a little more firm but still sweet I also added a little apple juice and chicken stock when I sautéed the apples and onions to make a little more sauce. I poured that on the rice I made as a side. Also served fresh green beans with Italian breadcrumbs. Husband loved it! It's a keeper!!

Delicious and easy! I added a couple T of brown sugar right before tucking the pork chops in the mix.. I also peeled the apples because, well, I just don't care for apple skin.
