|8 ozuncooked fusilli; or other spiral pasta|
|1 Tbspbalsamic vinegar; or more to taste|
|2 tspolive oil|
|1/2 tspDried Oregano|
|1 cupcherry tomato; (es), or grape tomatoes, halved|
|1/2 cupbasil; fresh, chopped|
|1/2 cuppart-skim mozzarella cheese; smoked, diced|
|1/8 tsptable salt; or to taste|
|1/8 tspblack pepper; or to taste|
Tomato, Basil and Smoked Mozzarella Pasta Salad Weight Watchers 4 Points Preparation
Cook pasta according to package directions without added salt or fat, drain and transfer to a large bowl. Add vinegar, oil and oregano; toss to coat.
Fold in tomatoes, basil and mozzarella; season to taste with salt and pepper. Serve warm and chilled. Yields about 1 cup per serving.
Notes: For an interesting flavor boost, add sun-dried tomatoes to this recipe. Place ? cup of dried sun-dried tomatoes in a bowl and cover them with boiling water; set aside for 10 minutes to allow the tomatoes to plump up. Drain well and substitute them for half the cherry tomatoes in the recipe.
