Ingredients
| 1 Sugar-free Ginger Syrup |
| 0.5 cupSplenda; or other sucralose sweetener |
| 0.75 cupWater |
| 0.5 ounceginger root; fresh, peeled & minced, about 1 inch |
| 1 The Drink |
| 2 ounceslime juice; fresh squeezed, about 2 limes worth |
| 24 ouncesSoda water |
| 1 Garnish |
| 0.5 sliceslime |
| 2 mediumMarachino Cherries; cut in half |
| 0.5 small piecescandied ginger |
Low Carb Ginger-lime Sparklers Preparation
SYRUP:
Combine sucralose and water. Add ginger. Simmer for about 30 minutes until reduced to about 1 cup and a light syrup consistancy. Strain through sieve (to remove ginger pulp) then through coffee filter (to make a clear syrup). Allow to cool. This can be made ahead in quantity and stored in the refrigerator for up to 3 weeks. THE DRINK:
Mix together 1/2 ounce of lime juice and 1 ounce of ginger syrup then pour over crushed ice in a tall (12 ounce) glass. Fill glass with about 6-8 ounces of soda water and stir briefly. Garnish with a slice of lime, 1/2 a cherry, and piece of candied ginger on a stick.
An umbrella and thin straw may be added to complete the presentation.
VARIATIONS: Adding a small amount of dark rum or vodka would make this a refreshing adult beverage.
