| 4 cupsVegetable broth |
| 1 packageCheese tortellini; refrigerated |
| 1 12-oz canItalian diced tomatoes; undrained |
| 1 12-oz canwhite kidney; or cannelloni |
| 1 1/2 teaspoonsDried basil |
| 1 tablespoonRed wine vinegar |
| 1/4 cupParmesan cheese; shredded |
| 1/8 teaspoonCoarsely ground pepper |
Too Easy Tortellini Soup Preparation
In a large saucepan, bring broth to a boil. Stir in tortellini. Reduce heat; simmer, uncovered, for 4 minutes, stirring occasionally. Stir in the beans, tomatoes and basil. Simmer for 4-6 minutes or until pasta is tender. Stir in the vinegar. Sprinkle with Parmesan cheese and pepper if desired.
