Beef and Cabbage Casserole

This is a delicious and easy meal-in-one-dish. If you use quick cooking brown rice instead of white rice, this is South Beach friendly (Phase 2).

2 mediumonions; sliced
1.5 lbscabbage; (about 6 cups), sliced
3 mediumcarrots; sliced
2 teaspoonsSalt
1 cupuncooked long-grain rice
1 14-oz canbeef broth
1/2 cupWater

Beef and Cabbage Casserole Preparation

In Dutch oven, cook burger and onions till burder is well browned. Remove from heat; add cabbage, carrots, salt. Mix well. Pour rice in 3-quart casserole. Spoon beef mixture on top. Pour beef broth and water over the whole thing. Cover; bake at 350? for one hour. 6 servings, 460 calories each

I like casserole dishes like this. They are easy to make in a Dutch Oven camping. The only things I changed was adding diced tomatoes to it and only a 1/4 cup of water.
