The St. Patrick's day dish! It's good any other time of year, too. Check my other recipe for home-corned beef, if you want a special treat. (It is easy but you need to start a few days in advance...)

3 carrots; chunked
3 poundscorned beef; (up to 4)
2 mediumonions; quartered
3 canswhole potatoes; (up to 4 cans)
1 canbeef broth
1/2 headcabbage; (or more if it fits), in wedge

Corned Beef and Cabbage Preparation

Put everything except cabbage into the pot. Cook Low 8-10 hours, High 5-6 hours. Add Cabbage wedges to liquid, pushing down to moisten, turn to High and cook additional 2-3 hours. NOTE FOR EXTRA CABBAGE: Cook separately in a skillet. Remove 1 cup of broth from pot during last hour of cooking. Pour over cabbage wedges in skillet. Cover and cook slowly for 20-30 mins.

    This was so easy that is was so good. Used red potatoes

    A very good crockpot version of Corned Beef and Cabbage that had lots of flavor and required minimal hands-on time. I used a marinated corned beef from Trader Joe's, substituted peeled and quartered russet potatoes for the canned ones, and added a bottle of Guiness. I placed the carrots and onions in the bottom of crockpot, washed off the corned beef and place it on top the veggies, and added enough beef broth and Guiness to just cover the meat. I cooked it on the high heat setting for the first hour, then cooked it for 7 hours on the low setting. I returned the heat setting to high, added the potatoes, and cooked for another 1 1/2 hours. I then added the cabbage and cooked until it was crisp tender, about 1 hour. The dish was easy to make, the veggies were perfectly cooked, and the meat was tender and delicious!
