20 ouncespotatoes; peeled and chopped
4 cupscabbage; (about 1 lb), shredded
1 largeOnions; chopped
1/4 cupmilk
1 TbsButter
4 ouncesCheddar cheese; shredded
1 teaspoonSalt
1/2 teaspoonBlack pepper

Colcannon Preparation

Boil potatoes till tender, remove from water, then boil cabbage and onion in the water for five minutes. Mash potatoes with butter and milk and salt and pepper. Mix in cabbage and onion. Mix in cheese until melted.

Oh My! This is Super Delish!! Made this a couple of times and overate both times. Only change I made was to add chicken bullion cubes to potato and cabbage water. Yumm-oh!

I used this recipe to accompany the Guinness casserole, the amount of cabbage that was to be added to the potatoes was too much, it was supposed to be cooked for only 5 minutes, it seemed under cooked and I had to add more potatoe, I couldnt taste the onion because of all the cabbage, if I did it again I would only use half the amount of cabbage or even less and cook it a bit longer than 5 minutes

I'd not tried colcannon with the addition of cheddar cheese. It's quite good as a side with any savory meat or vegetable dish. I dressed the top with some parsley instead of the traditional slather of butter.
