This is a very quick yeast bread. It's good with meals where French or Italian bread would be good.

Original recipe makes 0
2.5 cupsflour; (up to 3 cups)
1 TbsYeast
1 TbsSugar
1/2 TbsSalt
1 cupHot water
1/2 Tbssesame or poppy seeds; optional

Cuban Bread Preparation

Mix 1? c flour with the yeast, sugar, salt. Pour in the hot water and beat 100 strokes. Stir in remaining flour till dough is no longer sticky. Kneaad 6-8 mins. Place in greased bowl, cover, let rise 15 mins, punch down, shaping into a round loaf. Place on a baking sheet. Cut an X ?" deep on top. Brush with water, sprinkle with seeds. Place in middle shelf of COLD oven. Place cake pan of hot water on lowest shelf. Heat over to 400 and bake 40-50 mins until deep golden brown.
