Ingredients

1 pound cooked ham; diced
1 onion; chopped
1 leek; diced
2 carrots; diced
1 cup cabbage; chopped
1/4 cup Parsley
4 cups Beef broth
1 pound potatoes; diced
1 Bay leaf
2 teaspoons Black pepper
1 teaspoon Salt
1/4 teaspoon Nutmeg
1/2 cup Sour cream

Preparation

Combine onion, leek, carrots, cabbage, parsley, broth, and potatoes to Crockpot. Add seasonings. Cook on Low 8-10 hours, or High 4-5 hrs. Remove bay leaf. Remove the potatoes with a slotted spoon and mash. Combine the taters w/ sour cream. Return to pot and stir. Stir in ham. Serve.

Great recipe and not so difficult to prepare. In order to make it even tastier I added a few slices of jamon iberico de bellota - aka iberico ham or pata negra- thinly cut. Because iberico has a strong and delicious flavor you do not need much, only 50 grams or 1.8 OZ for four people added once the soup is finished. You can buy your jamon iberico at BuyJamon.com
