Dressing Ingredients
1/4 cupchicken or veggie broth
3 TbsRed wine vinegar
2 Tbsolive oil
1 clovegarlic; minced
1 Tbsbasil leaves; chopped
1/2 teaspoonSalt
1/4 teaspooncrushed red pepper flakes
Salad Ingredients
6 ouncesthree-color rotini; cooked and drained
1/4 cupfresh parmesan; grated
2 cupsbroccoli; steamed
10 cherry tomatoes; quartered
1 mediumred pepper; or orange/purple, julienned

Italian Rotini and Vegetable Salad Preparation

In a large bowl, mix the dressing ingredients. Add the rotini and parmesan and mix well. Mix in veggies and serve at room temp.
