Italian Rotini and Vegetable Salad

| 1/4 cupchicken or veggie broth |
| 3 TbsRed wine vinegar |
| 2 Tbsolive oil |
| 1 clovegarlic; minced |
| 1 Tbsbasil leaves; chopped |
| 1/2 teaspoonSalt |
| 1/4 teaspooncrushed red pepper flakes |
| Salad Ingredients |
| 6 ouncesthree-color rotini; cooked and drained |
| 1/4 cupfresh parmesan; grated |
| 2 cupsbroccoli; steamed |
| 10 cherry tomatoes; quartered |
| 1 mediumred pepper; or orange/purple, julienned |
Italian Rotini and Vegetable Salad Preparation
In a large bowl, mix the dressing ingredients. Add the rotini and parmesan and mix well. Mix in veggies and serve at room temp.
