Delicious and a little unusual!

"Thanks for pointing that out! When I opened Big Oven, my fractions were there just fine (one quarter cup for the milk, and one and a half Tbsp for the cornstarch), but for some reason when they uploaded, the fractions didn't take. I edited the recipe, posting the correct fractions in words, but there might be a delay in when it is posted, because I don't see the new written-out fractions yet." - stoniest13

Original recipe makes 6
3 Leeks; (lighter portion) sliced very thin
3 stalksCelery; sliced thin
2 Carrot; chopped
2 tablespoonButter
8 mediumPotatoes; cubed
5 cupsChicken broth
3 cupsWater
1 tablespoonLemon pepper
1 1/2 tablespoonGarlic; minced
1 teaspoonCumin
1 tablespoonSalt
1 teaspoonGround ginger
1/4 cupSour cream

Jeanine's Potato Leek Soup Preparation

Saute leeks, celery, carrots, and garlic in the butter for about 7 mins. Add potatoes, stock, and water, and bring to boil. Throw in spices. Cook till potatoes are well done, about half hour. Add sour cream. If needed for thickening, you can also add one quarter of a cup of milk mixed with one and one half Tbsp cornstarch.

Eat as is, or puree about half for a creamier soup.
