Original recipe makes 10
8 Egg; hardboiled
1/2 cupMayonnaise
1 dashSalt
1 dashBlack pepper
1 tablespoonDill; fresh, chopped
20 slicesBread

Puttin On The Ritz Egg Salad Sandwiches Preparation

Peel eggs and place in medium bowl. Coarsely mash with fork. Add mayonnaise, salt, pepper, and dill. Stir until well-blended. (This mixture can be covered and refrigerated for up to 2 days.) Spread 2 tablespoons of egg salad between 2 slices of bread to make 10 sandwiches. Yields 10 whole sandwiches or 20 halves.

I cut the crusts off sandwiches and then cut them in half on the diagonal to make pretty tea sandwiches. A fancy treat for kids birthday parties. [I posted this recipe.]
