0.5 poundItalian sausage; spicey
1 Onion; chopped
2 clovesGarlic; minced
1 tablespoonBasil; fresh, chopped
1 teaspoonOregano; dried
2 tablespoonBrown sugar
1.5 tablespoonSalt
1 29-oz canDiced tomatoes
2 6-oz cansTomato paste
Lasagna Noodles; dried
2 Egg; beaten
1 pintRicotta cheese; part-skim
0.5 cupParmesan cheese; grated
2 tablespoonParsley; dried
1 teaspoonSalt
1 poundMozzarella; shredded
2 tablespoonParmesan cheese; grated

Americana Lasagna Preparation

In a medium skillet over medium heat, brown sausage, onion and garlic. Drain fat. Mix in basil, oregano, brown sugar, 1 ? tablespoons salt, diced tomatoes, and tomato paste. Simmer for 30-45 minutes, stirring occasionally.

Preheat oven to 375 degreees F (190 degrees C). Bring a large pot of water to boil. Add lasagna noodles and cook for 5 to 8 minutes or until al dente. Drain and lay noodles flat on towels or parchment paper.

In medium bowl, mix together eggs, ricotta, 1/2 cup parmesan, parsely and 1 teaspoon salt.

Layer 1/3 lasagna noodles in the bottom of a 9x13 baking dish. cover noodles with 1/2 cheese mixture, 1/3 mozzarella cheese, and 1/3 sauce. Repeat. Lay remaining 1/3 lasanga noodles on top. Cover with remaining sauce and mozzarella cheese. Sprinkle additional parmesan cheese on top.

Bake in preheated oven for 30 minutes. Let stand 10 minutes before serving.

This is a hearty dish that gets better the next day. It can easily be made without the sausage for a vegetarian dish, or with ground beef if you don't like sausage.

I often make the sauce to use over spaghetti for a fancy, hearty meal. It also freezes well so make a couple batches and divide to save prep time later.

I also use oven-ready, no-boil lasagna noodles to eliminate that step. Just be sure the noodles are completely covered by sause or they will be crunchy. [I posted this recipe.]
