Vermont Cheddar Cheese Soup

This makes a nice light supper if served with a salad. If you leave out the croutons, it's South Beach friendly.
"Great cheese soup recipe. I went ahead and doubled the veggies for more substance. You could add chopped ham or crumbled cooked sausage for more "main dish" value. My family loved it and asked me to make it again. Just enough in this recipe to feed my family of 7, including seconds and a lunch for my husband the next day. "

Ingredients
| 3 TbsButter |
| 1/2 smallOnions; chopped |
| 1 smallcarrot; chopped |
| 1/2 smallred bell pepper; chopped |
| 1 smallcelery stalk; chopped |
| 2 clovesgarlic; minced |
| 3 TbsFlour |
| 4 cupsChicken broth |
| 3/4 poundsharp cheddar cheese; shredded |
| 3 cupsmilk |
| salt; hot pepper sauce to taste |
| croutons and fresh parsley; to serve |
Vermont Cheddar Cheese Soup Preparation
Melt butter in large pan. Add veggies and cook till soft. Stir in flour and cook 3 mins. Add broth slowly, stirring constantly. Add cheese and cook stirring till melted. Stir in milk and season to taste. Simmer gently till heated. Garnish with croutons and parsley.
