| 1 poundChicken meat; cooked; small dice |
| 1/2 eaRed onion; peeled; minced |
| 1 eaRed bell pepper; minced |
| 1 eaGreen bell pepper; minced |
| 1 cupHot pepper sauce |
| 1 teaspoonSalt |
| 1/2 teaspoonWhite pepper |
| 12 ouncesCheddar cheese; shredded |
| 4 10-inchFlour Tortillas |
| Pan spray |
Chicken Quesadilla Preparation
Combine cooked chicken with onion, peppers, hot sauce, salt and pepper. Mix well. Heat a large saute pan or use an electric griddle. Divide the chicken mixture and cheese between the 4 tortillas and fold in half. Spray the pan or griddle with pan spray. Place quesadilla on pan or griddle and cook 3-4 minutes until light brown. Flip quesadilla over and continue cooking on the opposite side an additional 3-4 minutes until tortilla is light brown and ingredients are heated throughout. Remove from pan and hold in a warm oven until all quesadillas are cooked. Remove from oven and cut each quesadilla into 4 triangles.
Serve with sour cream and salsa.

these were great, i used turkey instead of chicken, and only green bell pepper, and butter instead of the pam spray, bring these babies up a notch by shaking on some grated parmesan cheese right after cooking, YUMMERZ!, CCheryl
