1 1/2 tablespoonExtra Virgin Olive Oil
3 tablespoonFresh Lemon Juice
Lemon Zest; of one lemon
1 1/2 tablespoonBalsamic vinegar
1/2 cupNatural rice vinegar
1/2 teaspoon100% maple syrup
3/4 teaspoonCeltic salt
1/4 teaspoonCayenne pepper
1/4 teaspoonBlack Pepper; freshly ground
1 headRed cabbage; shredded
1/4 cupFresh parsley
4 tablespoonCilantro; chopped
1/4 cupSweet onion; chopped

Sweet Red Cabbage Coleslaw Preparation

Whisk together the olive oil, lemon uice, vinegars, maple syrup, pepper and cayenne in a large bowl. Add the cabbage, parsley, cilantro, and onion; stir. Let stand at room temperature for 1 hour.

A bit too strong for my tastes, and nothing seemed to blend together. I'm not sure how to fix it. Maybe some more sweetener?
