The chicken Lettuce Wraps can be made with pork, beef or chicken. An easy, elegant appetizer or light main course. In this dish, savory, soy-flavored chicken is spooned into individually wrapped lettuce shells.

12 ozground chicken
2 tablespoonsSoy sauce
1 tablespoonhoisin sauce
1/2 onion; chopped finely
1 teaspoongrated ginger
1 cloveGarlic; minced
1/2 red pepper; diced finely
1/2 yellow pepper; diced finely
1 tablespooncilantro; finely chopped
1 tablespoongreen onions; finely sliced
1 cupmushrooms; cleaned and finely chopped
1 tablespoonVegetable oil
2 tablespoonsrice vinegar
1 tablespoonGranulated Sugar
2 tablespoonsWater
2 tablespoonsCucumber; finely diced
1/2 teaspoonred pepper flakes; or more to taste
1 headbutter lettuce; washed dried and chilled

Asian Chicken Lettuce Wraps Preparation

Bring a large wok up to medium high heat. Add vegetable oil, and saute onions and garlic for 1-2 minutes until softened. Add mushrooms, ground chicken, diced pepper, ginger. Stir fry on high heat for 4-5 minutes or until chicken is completely browned. Drain liquid, then add the remaining ingredients and stir. Bring down to a simmer and/or cover to keep warm.

Meanwhile, prepare the sweet/sour sauce to accompany the lettuce wraps. In a small saute pan, add sugar and water, and stir to dissolve. When the sugar is completely dissolved (2-3 minutes), add vinegar, cucumbers and red pepper flakes.

    Very tasty. I recommend updating the directions though - when it said to 'add remaining ingredients' I added all including the sweet/sour items. Still turned out well though. I added water chestnuts - yum

    Really yummy! Less sugar than the P.F. Changs version too. My husband and I shared it as an entree (no carbs, so you eat a lot of it!) but it would make a great appetizer.
