Asian Chicken Lettuce Wraps

The chicken Lettuce Wraps can be made with pork, beef or chicken. An easy, elegant appetizer or light main course. In this dish, savory, soy-flavored chicken is spooned into individually wrapped lettuce shells.

Ingredients

12 oz ground chicken
2 tablespoons Soy sauce
1 tablespoon hoisin sauce
1/2 onion; chopped finely
1 teaspoon grated ginger
1 clove Garlic; minced
1/2 red pepper; diced finely
1/2 yellow pepper; diced finely
1 tablespoon cilantro; finely chopped
1 tablespoon green onions; finely sliced
1 cup mushrooms; cleaned and finely chopped
1 tablespoon Vegetable oil
2 tablespoons rice vinegar
1 tablespoon Granulated Sugar
2 tablespoons Water
2 tablespoons Cucumber; finely diced
1/2 teaspoon red pepper flakes; or more to taste
1 head butter lettuce; washed dried and chilled

Preparation

Bring a large wok up to medium high heat. Add vegetable oil, and saute onions and garlic for 1-2 minutes until softened. Add mushrooms, ground chicken, diced pepper, ginger. Stir fry on high heat for 4-5 minutes or until chicken is completely browned. Drain liquid, then add the remaining ingredients and stir. Bring down to a simmer and/or cover to keep warm.

Meanwhile, prepare the sweet/sour sauce to accompany the lettuce wraps. In a small saute pan, add sugar and water, and stir to dissolve. When the sugar is completely dissolved (2-3 minutes), add vinegar, cucumbers and red pepper flakes.

We modified the recipe quite a bit due to diet and pantry limitations :) But the chicken was excellently flavored, and the dish was easy. Thank you!

Delicious. Trying to figure out how to reach the 20minute prep time- food processor? Also, was easy to overcook the veggies, and I'd add the cilantro later. Ginger was very strong.

Really yummy! Less sugar than the P.F. Changs version too. My husband and I shared it as an entree (no carbs, so you eat a lot of it!) but it would make a great appetizer.
