1 poundhash brown potatoes; frozen
1/2 Onion; chopped
1/2 Green bell pepper; chopped
1/2 poundground sausage or cubed ham
1 cupCheddar cheese; shredded
6 Eggs
1 cupmilk
Salt and Pepper; to taste

Breakfast In A Slow Cooker Preparation

Cook sausage until no longer pink. Spray inside of slow cooker with cooking

spray. Place 1/2 of the hashbrowns in bottom, layer 1/2 of each bell

pepper, onion, crumbled sausage, and cheese. Repeat the layering process.

In a bowl, add eggs, milk and salt and pepper; mix well. Pour over

ingredients in crockpot. Cover and cook on low for 8 to 10 hours. (Be sure

and check this after 4 hours if using a new crockpot).

Pretty good! I added mushrooms and an extra egg, and let it go overnight for breakfast in the morning.

Second time making this dish! We sauté the onions with the sausage and added some seasoning to the hash browns. We also added bacon, tomatoes and two extra eggs. For a spicy taste, add some dry red chili peppers when done! Yum!

Tried this this morning and tasted great! Used xtra sharp cheddar and a can of mild chilles intead of green peppers. Very flavorful! Taters got a little too done, and there was a lot of juice on the bottom of the crock pot. Maybe I'll cook it just 6 hours next time! Thanks for the great recipe!

This came out a little bland for. Salt and pepper to taste is keys.
I'm gonna take another shot at this with some more punchy peppers and about 1lb of bacon.
I found it to be a good base to work from.
