Confit Zest Of Lime Preparation
Strip the lime zest into strips.
Combine the water and the sugar in a small pot and bring to a boil. Add the zest and reduce heat to a simmer. Loosely cover the pot and let the liquid cook until it is reduced by half. Remove from heat and allow mixture to cool completely. Strain the zest and place in airtight container and place in fridge.
