Original recipe makes 6
4 slicesBacon
2 tablespoonButter; optional
1 Leek; white part, cleaned and sliced
2 ribsCelery; diced
2 poundsPotatoes; peeled and diced
1/2 teaspoonSalt; or to taste
1/4 teaspoonBlack pepper; or to taste
1 teaspoonParsley; finely chopped, or 1 T dried
8 cupsChicken Stock

Smoky Potato-leek Soup Preparation

Cook bacon in a large soup pot until done. Set bacon aside, leaving fat in pot. Add butter, leeks, and celery, and cook on low heat for 5 minutes. Chop cooled bacon and add, along with remaining ingredients. Bring to boil. Lower heat and simmer 30 minutes. Puree half the soup in batches in a blender, or use a stick blender to partially blend soup.
