Healthy Sausage Stir Fry

| 1 cupRed, yellow, and/or green bell pepper; thin sliced, any combination of three |
| 1 mediumYellow summer squash; 1/4" slice |
| 1 mediumZucchini; 1/4" slice |
| 1 small bunchGreen onion; 1/4" slice |
| 1/2 cupButton mushrooms; sliced |
| 1 packageTurkey smoked sausage; sliced, about 3/4" pieces |
| 2 tablespoonOlive oil |
| 2 eaGarlic cloves; sliced very thin |
| 1/4 cupParsley |
| 2 tablespoonLemon juice |
Healthy Sausage Stir Fry Preparation
All ingredients are suggestions and amounts can be changed to suit your own taste. Put olive olive in hot non stick skillet. Add sausage pieces and lightly brown. Add vegetables, garlic, and mushrooms. Salt and pepper to taste and saute until heated through. Reduce heat and cover. Cook until vegetables are just tender. Add abut 1/4 cup parsley and 2 tablespoons lemon juice. Toss mixture and serve over riceor pasta. Add soy sauce at table if desired.
