Add vegetables, garlic, and mushrooms. Salt and pepper to taste and saute until heated through. Reduce heat and cover. Cook until vegetables are just tender. Add abut 1/4 cup parsley and 2 tablespoons lemon juice. Toss mixture and serve over riceor pasta. Add soy sauce at table if desired.
