This is adaptable. I could see adding corn or rice or a hotter salsa to give it more kick. Reminds me of a dish we had in Costa Rica

| 2 poundsskinless boneless chicken breasts; cut 1 1/2" pieces |
| 4 mediumrusset potatoes; peeled, and cut very small |
| 1 15-oz canmild salsa |
| 1 4-oz candiced green chilies |
| 1 1.25-oz packagetaco seasoning mix |
| 1 8-oz cantomato sauce |
| Flour tortillas; for serving |
Chicken Stew Mexican Style Preparation
Mix all ingredients together in crockpot, put on LOW in the morning and it is ready for dinner in the evening. Serve it with flour tortillas.
This recipe yields 4 to 6 servings.
