| 1 cup Oil | |
| 2 cup Sugar | |
| 3 cup Flour | |
| 1 teaspoon Salt | |
| 1 teaspoon Cinnamon | |
| 1 teaspoon Baking soda | |
| 2 teaspoon Baking powder | |
| 1 teaspoon Vanilla | |
| 2 cup Zucchini shredded | |
| 1 cup Pecans chopped | |
| 1/4 cup Orange juice | |
| 1 cup Coconut shredded |
Preparation - Zucchini Bread
Cream eggs and sugar. Combine oil with eggs and sugar mixture. Mix dry ingredients in separate bowl. Mix dry ingredients with eggs, sugar and oil. Mix alternating with orange juice. Add vanilla. Mix in zucchini, nutrs and coconut. Grease and flour two narrow loaf pans. Bake at 350? for 65- 70 minutes until toothpick comes out clean.


Very, very good! I've made it twice in the last month. Very moist, not dry at all like some recipes. The flavor is great, everything you want in a perfect zucchini bread. I also like the fact that the recipe makes 2 loaves at once. Because the first one gets eaten so fast!
