New York Chefs are passionate about using the finest and freshest ingredients. In doing so, the simplest of dishes - such as the beloved burger - can be easily transformed into a masterpiece.
1. Start by making the onion jam. Place a large saute pan over medium heat and melt the butter and olive oil together. Add the onions and cook, stirring occasionally. As soon as the opnion take on a translucent, caramelised gloss (approximately 15 minutes), reduce the heat by half and add the vinegars, sugar, fresh thyme, salt, pepper and ? cup of water. Reduce the heat to low and simmer, uncovered, for 15-20 minutes until the onion mixture has the consistency of jam. Add more water if the onions start sticking to the pan. Remove from the heat, remove the thyme sprig and adjust the seasoning to taste with salt and pepper. Set aside.
2. Meanwhile prepare the burgers by combining the beef, egg yolks, spring onions, Worcestershire sauce, sea salt and pepper. Stir together until all the ingrdients are well blended.
3. Use the palms of your hands, slightly dampened, to shape the meat into four round patties, each abour 3.5 cm thick. Cook the burgers over an open-fire barbeque or directly under a pre-heated oven grill. Turn each patty only once. Cook for 4 minutes per side for medium-rare, 4? minutes per side for medium, or at least 5 minutes per side for well-done and cooked through. Remove from the heat (or oven) and set aside to rest for 2 minutes.
4. While the burgers are cooking, prepare the rest of the trimmings. Combine the mayonnaise and horseradish in a small bowl; divide the mixture evenly between the four bread rolls halved. Spread the dijon on the remining sides.
5. To assemble the burgers, place a patty on each Dijon-covered bread roll half. Top each with tomato slices and pickles. Lastly, add a generous helping of onion jam, a lettuce leaf or two and top with the mayo-spread bread roll top.
Serve at once!
The onion jam will keep for 3 weeks in a sealed container or glass jar in the fridge. Also delicious when served with cheese and crackers.
