Original recipe makes 4
4 slicesBacon; (fried), crumbled
2 tablespoonExtra Virgin Olive Oil
1 smallRed onion; chopped
1 poundBrussels Sprouts; trimmed and cut in halve
Salt and pepper to taste
1 cupChicken Stock
1/2 Orange zest
1/2 Orange juiced

Brussels Sprouts with Orange and Bacon Preparation

In a large skillet over medium heat, fry the bacon until crispy. Remove the bacon to a paper towel to drain. Add the olive oil to the bacon grease. Put in the onion and saute until translucent. Add the brussels sprouts, salt and pepper. Stir and allow the brussels spouts to caramelize. Add the chicken stock and cover with a lid. Cook until sprouts are tender (about 15 min.) Uncover and allow the rest of the liquid to evaporate out and remove from heat. Pour the brussels sprouts into a dish. Gently stir in the orange zest and the orange juice. Top with crumbled bacon pieces. Ummm good!

Notes

The orange isn't necessary, but it sure adds a nice fruitiness along with the savory and smokey bacon.

Sorry to say this didn't really work out well. Covering the sprouts first makes them soggy. You're better off cooking them uncovered. You're better off cooking them for 15-20 minutes, ladling in chicken stock occasionally to keep them from burning.
