| 2 Zucchini; sliced thick |
| 15 ozGarbanzo beans; liquid |
| 1 tsGround coriander |
| 1/4 tsGround cumin |
| 2 Sweet Potatoes; peel & cut |
| 1/4 cRaisins; dark or golden |
| 1 lgOnion; chopped |
| 5 Tomatoes; or 16 oz. canned |
| 1/2 tsGround ginger |
| 1/2 cCouscous; or bulgar wheat |
| 1/2 tsGround turmeric |
| 1/2 tsGround cinnamon |
| 3 cWater |
African Vegetarian Stew Preparation
Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes. Note: Serve the couscous separately, if desired.
