Mushrooms Sauteed with Garlic Butter

This simple yet elegant dish makes a delicious first course or, served in smaller portions, a superb amuse-gueule.

"Use small white mushrooms, not just the white ones at your local grocery store. I tried it with the large mushrooms because I figured it didn't matter, but it does. I would have liked them to have had a stronger garlic taste, but that depends on the cook I guess. Overall a nice quick way to get some veggies in your diet."

Ingredients

3 tablespoons Unsalted butter
1 tablespoon garlic; finely chopped
1/2 teaspoon Salt
1/4 teaspoon Fresh ground black pepper
3/4 pound small white mushrooms; wiped clean and sliced in half
2 tablespoons fresh flat-leaf parsley; chopped

Preparation

Melt butter in a lidded saute pan or skillet over low heat. Add garlic, salt and pepper and cook until fragrant, about 1 minutes. Add mushrooms and toss with garlic butter to coat.

Cover pan and cook for 10 to 12 minutes, stirring occasionally, and making sure garlic doesn't burn (if necessary, reduce heat to very low). Just before serving, toss mushrooms with parsley.

Makes 4 first-course servings.

Not bad, I personally don't care for mushrooms but I did like these! Only thing I would change is that it was a little too much garlic for my taste. Next time I will add a bit less

These were awesome! When the mushrooms were about half way done cooking, I added a (drained) can of french-style green beans. Super yummy!!

NOT a fan of mushrooms, so I wasn't terribly excited about having to bring a mushroom dish to a staff mixer, BUT it was SUPER quick to make, which was exactly what I was going for, on account that no one in my house can stand the smell of mushrooms cooking!
