Grilled Romaine and Caesar Dressing
Crunchy Romaine lettuce with touch of smoke from a quick trip to the grill and a homemade spicy caesar style dressing. Add croutons for a complete crunch.

|3 tablespoonsMayonnaise; (best if you can whip your own)|
|1 tablespoonDijon mustard|
|2 teaspoonWorcestershire Sauce|
|2 tablespoonRed wine vinegar|
|1/4 Red onion; coarse chop|
|6 clovesGarlic; roasted|
|1 pepperCanned Chipotles in Adobo Sauce|
|2 teaspoonHot pepper sauce|
|1 teaspoonSalt; to taste|
|1 teaspoonBlack pepper; to taste|
|1/2 cupCanola Oil; plus a few drops for brushing the romaine|
|1/4 cupParmesan; shaved for garnish|
|2 headsRomaine; outer leaves removed, cut in half lengthwise|
Grilled Romaine and Caesar Dressing Preparation
Place mayonnaise, mustard, Worcestershire, vinegar, onion, garlic, anchovies, chipotle, hot sauce, honey and salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified. Add the Parmesan and blend a few seconds longer.
Heat grill to high.
Brush romaine with oil and season with salt and pepper; place on the grill cut-side down and grill for 30 to 40 seconds or until slightly charred. Arrange lettuce on large platter, drizzle with the dressing and garnish with shaved Parmesan.
