Grilled Romaine and Caesar Dressing

Crunchy Romaine lettuce with touch of smoke from a quick trip to the grill and a homemade spicy caesar style dressing. Add croutons for a complete crunch.

3 tablespoonsMayonnaise; (best if you can whip your own)
1 tablespoonDijon mustard
2 teaspoonWorcestershire Sauce
2 tablespoonRed wine vinegar
1/4 Red onion; coarse chop
6 clovesGarlic; roasted
3 wholeAnchovies
1 pepperCanned Chipotles in Adobo Sauce
2 teaspoonHot pepper sauce
2 tablespoonHoney
1 teaspoonSalt; to taste
1 teaspoonBlack pepper; to taste
1/2 cupCanola Oil; plus a few drops for brushing the romaine
1/4 cupParmesan; shaved for garnish
2 headsRomaine; outer leaves removed, cut in half lengthwise

Grilled Romaine and Caesar Dressing Preparation

Place mayonnaise, mustard, Worcestershire, vinegar, onion, garlic, anchovies, chipotle, hot sauce, honey and salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified. Add the Parmesan and blend a few seconds longer.

Heat grill to high.

Brush romaine with oil and season with salt and pepper; place on the grill cut-side down and grill for 30 to 40 seconds or until slightly charred. Arrange lettuce on large platter, drizzle with the dressing and garnish with shaved Parmesan.
