1 cupGranulated sugar
1 cupPowdered sugar
2 cupsShortening
3/4 teaspoonVanilla
1 largeEgg; beaten
4 1/3 cupsCake flour
3/4 teaspoonBaking soda
1/4 teaspoonSalt

Sugar Cookies (paradise Bakery) Preparation

Heat oven to 375 degrees. In a medium bowl, cream together sugars and shortening using an electric mixer. Mix on slow speed 30 seconds, then scrape down the bowl with a spatula. Increase speed to medium and mix for 3 minues. Slowly add vanilla and beaten egg while mixing.

In a separate bowl, combine cake flour, baking soda, baking powder and salt. Gradually add flour mixture to the creamed mixture, mixing on slow speed until just blended. Do not overmix.

Scoop with an ice cream scoop and roll in sugar. Place on baking sheet. Flatten slightly with palm of hand. Bake 9-10 minutes. Cookies are done when small cracks appear and are pale golden. Ideally, do not let edges brown. You may also decorate the tops with plain or colored sugar.

Makes about 3 dozen cookies.

It is a great recipe. However it does not give the amount of Baking powder to use... Please provide?

They weren't too bad, although I'm not sure they tasted exactly like the ones from Paradise Bakery.

I would make it again but have some recommendations. It says medium bowl, use a large one. Even my large pyrex bowl was full to the brim, had to divide to mix. Moisture was the bigger challenge. The mixture was so dry I had to add milk to get the dough to stick and form. Tried to make it touch of milk and cookies actually split into pieces while cooking, so had to add a tsp more to each batch. I used 2 inch flattened balls and only got 24 cookies, smaller than Paradises. It does taste the same though.
