Good crockpot recipe.

"Excellent recipe. One suggestion; add the volume of tomato products to be used. Pretty easy to overwhelm with too much!

Made this with an old laying hen from the farmer's market. I added one cup of red wine, but otherwise stuck to the recipe.

Results were delicious over rice. With the wine, there was enough liquid that I deboned the cooked chicken back into the pot and served it as a near soup stew.

1 wholeChicken
1 canStewed Tomatoes
1 canTomato sauce
2 clovesGarlic; diced
1 mediumOnion; diced
2 stalksCelery; chopped
1 teaspoonOregano
1/2 teaspoonSweet Basil
1/2 teaspoonRosemary
1/2 teaspoonCilantro
1 teaspoonSalt
1/4 teaspoonblack pepper

Crockpot Chicken Cacciatore Preparation

Mix tomatoes and tomato sauce. Add all other ingredients.

Place chicken in crockpot and pour mixture over chicken.

Place crockpot on High until mixture begans to boil.

Turn crockpot to Low and let simmer during the day.

When ready to serve, test to ensure that chicken is done, serve over pasta or rice.

Note: Chicken parts of your choice may be substitued for the whole chicken.

    I used fresh basil chopped into thin strips, and a couple sprigs of fresh rosemary. 29oz cans each of the tomato products. I also added 14oz of sherry cooking wine and 3 finely chopped rose potatoes. Used 4 boneless skinless chicken breasts and broke them up into soupy Constancy. Makes a great soup as well as served over pasta or rice.
