Butter flavored cooking spray
2/3 cupcorn flake crumbs
1/4 teaspoonSalt
1/4 teaspoonGround red pepper
4 4-ozfarm-raised catfish fillets
2 egg whites; beaten

Country Catfish (serves 4; 15 Minutes Total) Preparation

Line a shallow pan with aluminum foil. Coat with cooking spray.

Combine crumbs, salt, and pepper in a small bowl; stir well. Dip fish in beaten egg whites; dredge in crumb mixture. Place fish in pan. Bake at 450 degrees for 8 to 10 minutes or until fish flakes easily when tested with a fork. Serve immediately.

Give this a more cajun flair by adding cajun seasoning to the crumb mixture and serving with a tangy remoulade.

You can make this with more of a cajun flair by adding cajun seasoning to the corn flake mixture and serving with a spicy remoulade.
