| 1 Onion; chopped |
| 1 Garlic; minced |
| 4 Chicken breast; shredded |
| 1 cupSalsa |
| 4 ounceCream cheese; cubed |
| 1 tablespoonCilantro; chopped |
| 1 teaspoonCumin; ground |
| 1 cupCheddar - jack cheese; shredded |
| 8 Tortilla shells |
Fiesta Chicken Enchiladas Preparation
Preheat oven to 350?. Heat large skillet sprayed with cooking spray on medium heat. Add onions and garlic; cook and stir 2 mins. Add chicken, 1/4 c of the salsa, the cream cheese, cilantro and cumin; mix well. Cook until heated through, stirring occasionally. Ad 1/2 c of the shredded cheese; mix well. Spoon about 1/3 c of the chicken mixture onto each tortilla, roll up. Place, seam-side down, in 13x9: baking dish sprayed with cooking spray; top with remaining 3/4 c salsa and remaining 1/2 c shredded cheese. Bake 15-20 mins or until heated through.
