Orange Sauce, Catch Of The Day

The orange flavor is a nice combination with a white fish and a green vegetable. The sauce is quickly prepared while the fish is cooking.

"This is a great basic recipe but I made some changes. I added 2 tablespoons of white wine to reduce with the orange and lemon juice. Then I added about 1 to 1 1/2 tsp of sugar with the pinch of salt. Once eill mixed I added only about three tablespoons of butter, which I beat in one tablespoon at a time. I then added the zest and several orange slices. I reduced the heat to low and only cooked until the orange slices were warm. I poured this over slamon. The orange slices taste amazing when eaten in the same bite as the salmon. " - Mistikaldarkhope

1 tablespoonOrange zest
1/2 cupOrange juice
2 tablespoonsLemon juice or Pernod
pinchSalt
pinchPepper
1/2 cupButter; cold and diced
4 5-oz filletsFresh Fish
1 tablespoonolive oil

Orange Sauce, Catch Of The Day Preparation

Preheat oven at 425C.

Prepare baking tray with foil.

Prepare all ingredients for sauce. Orange zest, juice and butter, keep cold.

Drizzle oil on fish filets, season with salt and pepper.

Bake fish in center of oven for 5 to 10 min depending on thickness.

While fish is baking, prepare sauce.

Pour orange and lemon juice (or pernod) in a small pan.

Boil and reduce for 1 min. Salt and pepper.

Add butter a few cubes at a time and beat.

Pour over fish and serve.

Serve with bok choy or a green vegetable of your liking.

This sauce is also nice on asparagus

This sauce is great! It goes well with so much and was quick to make.

I like quick and easy recipes.
This is certainly one of them and give a very simple meal a 'special' look.
I generaly cut down the amount of butter suggested in most recipes
