The orange flavor is a nice combination with a white fish and a green vegetable. The sauce is quickly prepared while the fish is cooking.
Preheat oven at 425C.
Prepare baking tray with foil.
Prepare all ingredients for sauce. Orange zest, juice and butter, keep cold.
Drizzle oil on fish filets, season with salt and pepper.
Bake fish in center of oven for 5 to 10 min depending on thickness.
While fish is baking, prepare sauce.
Pour orange and lemon juice (or pernod) in a small pan.
Boil and reduce for 1 min. Salt and pepper.
Add butter a few cubes at a time and beat.
Pour over fish and serve.
Serve with bok choy or a green vegetable of your liking.
