16 smallnew potatoes; quartered
3 tablespoonsUnsalted butter
1/4 cupfresh chervil leaves
1/2 teaspoonCoarse Kosher Salt
1/2 teaspoonBlack Pepper; freshly ground
1 medium headgarlic; roasted

Twice-cooked Potatoes with Roasted Garlic Preparation

Roast the garlic until it's soft and browned.

Cook the potatoes in boiling water until just tender, approximately 10 minutes: Drain well:

Melt the butter in a large skillet, add the boiled potatoes, and saute over medium heat just until crispy, about 5 minutes. Sprinkle with chervil, season to taste, and serve hot:
