A warm favorite that's good any time of the year. It's a one- dish meal that's sure to please!

"Very tasty soup especially if you have the leftovers for it! Only thing I question is the quantity of potatoes - like for 8 servings, 5 potatoes would be plenty NOT 5 pounds! I cut recipe in half, used 1 very large potato, 4 cups of water combined with some chicken Bovril and the rest of ingredients, halved - made a good sized batch - yumm!" - sewbear

3 tablespoonsButter
1/4 cupGreen onion; chopped
1 largeVidalia onion; chopped
3 stalksCelery; chopped
1 tablespoonGarlic; minced
5 poundsPotato; peeled and chopped in medium-sized chunks
1/2 teaspoonSalt
1 tablespoonChicken bouillon granules
8 ouncesHam; chopped into squares
3 cupsBroccoli; frozen, chopped
1 cupSour cream
2 tablespoonsFlour
2 cupsmilk
Cheddar cheese; shredded for garnish
Bacon bits; garnish

Broccoli and Ham Potato Soup Preparation

Melt butter in a large pan on medium high heat. Saute green onion, vidalia onion, celery, and garlic until done. Add potatoes, salt, and boullion granules. Fill the pan with water to just cover the potatoes. Bring to a boil and cook for 10 minutes. Add the ham and broccoli. Cook another 10 minutes. Check the potatoes. They should be just done and easily pierced with a knife, but not falling apart. While the potatoes are cooking, mix the sour cream with the flour, then add the milk. Add this mixture to the pan all at once after the potatoes are done. Bring to a boil. The soup will thicken and be ready to serve in 3-5 minutes. Garnish with cheddar cheese and bacon bits for a delicious, hearty meal.

    I made this with ingredients at hand. I substituted bacon for ham. I use Minor's soup base for the chicken bouillon so held up on the salt. I also like a lot of garlic.

    Delicious. I replaced butter with olive oil and cooked potatoes in chicken stock instead of using granules. I used fresh broccoli. Very tasty and filling comfort food.

    This was so delicious and had a delectible buttery taste! I made changes too.. I used a lot more garlic, light olive oil in place of butter, and 'Better than Bouillion' (2 heaping spoons full), and no onions because my hubby doesn't like them (a shame). Yummy yum yum!!

    Amazingly good! I did make two small changes. Since I had plenty of homemade chicken stock, I omitted the chicken bouillon granules an used stock in place of the water to cook the potatoes. I also had some leftover roasted broccoli so I used it in place of the frozen broccoli. The soup had a lot of flavor and was quite enjoyable!
