This is a wonderful traditional recipe that has been in my family since before I was born and we have also enjoyed this recipe with lobster substituted for the crab meat.

Original recipe makes 4
1 poundJumbo lump crab meat; picked
1 stalkgreen onions; sliced
1 teaspoonItalian parsley; washed and chopped
1 tablespoonlemon juice
2 tablespoonsmayo
1 teaspooncreole mustard
1/2 teaspoonhorseradish
1 pinchsalt
1 pinchblack pepper
2 tablespoonsbread crumbs
1 teaspooncreole seasoning

Louisiana Crabmeat Cakes Preparation

Combine all ingredients, and portion in to 2 oz cakes. Sprinkle Seasoned flour on both sides and pan sautee
