| 1 cupunsalted butter; at room temp. |
| 1/4 cuppowdered sugar |
| 1/4 cupgranulated sugar |
| 2 teaspoonsvanilla |
| 1 1/2 cupsall-purpose flour |
| 1/4 teaspoonSalt |
Buttery-Scotch Shortbread Preparation
preheat oven to 300*. Have ready an ungreased 9" square pan.
In large bowl, cream the butter until pale and fluffy. Add both sugars and beat untill well combined. Beat in vanilla.
In a small bowl, sift the flour and salt together. Gradually add the flour mixture to the butter mixture and mix on low speed just untill blended.
Using floured fingertips, press the dough evenly into the pan. You may sprinkle any kind of granulated sugar over the dough (1 tablespoon).
Bake about 1 hour. Remove from oven and immediatly cut into 3"x1" strips. Allow to cool for 30 minutes before removing from the pan.
