I just had a big, healthy and satisfying bowl of homemade soup for lunch ... this recipe is so easy, I don't even have it written down!

"I am not a good cook & I made this for my husband (a critical eater) the weekend and he loved it!! I was shocked, he loved it so much I made two batches of it!! The only thing different I did was I also added a little cummin & hot sauce to it!! and it's true the longer it cooks the heartier it gets!"

1 can low sodium chicken broth
1 16-oz package frozen California-style vegetable
1 can Italian diced tomatoes; including juice
1 can black beans; rinsed & drained
1 can dark red kidney beans; rinsed & drained
1 can garbanzo beans; rinsed & drained
1 tsp. oregano
0.5 tsp. Pepper

Original recipe makes 10



Add the frozen vegetables to boiling chicken broth, reduce heat and simmer. Add all the other ingredients and allow to simmer for at least 10 minutes. You can add corn or green beans or just about any veggie you like. Use low-sodium or sodium-free whenever possible.

Very good and nice presentation. Next time will change recipe to be two cans of broth instead of one. Also, couldn't find California vegetables so used frozen 'Soup Vegetables' instead. Tasted great! Thanks for posting recipe!

This soup is excellent! I added chicken and used different veggies, then let it cook for over an hour... Delicious! Thanks for sharing!

This was really good, hearty and healthy! Truly a super soup! I don't know what the california veggies were but I added broccoli, cauliflower and carrots. I also didn't have kidney beans but it turned out delicious and I'll be making it again soon!
