Original recipe makes 6
1/4 cupShortening, butter flavored
1 poundChicken gizzards
1 poundChicken livers
1 1/2 cupOnions; diced
1/2 cupCelery; diced
1/2 cupGreen bell pepper
2 clovesGarlic; minced
2 teaspoonSalt
1 teaspoonPepper
1/8 teaspoonCayenne
3 cupsRice; cooked

Cajun Chicken Dirty Rice Preparation

Heat shortening in skillet on medium heat. Add finely chopped livers and gizzards and brown. Add onion, celery, green pepper, garlic salt, pepper and cayenne. Mix well. Cover and cook on med. heat, stirring occasionally, until vegetables are tender. Add rice and mix lightly. Serve hot.
