This classic has been in my wife's family for many many moons. Yields a firm crumbly cookie (when prepared per the directions below) that is sheer edible bliss when dunked in ice cold milk ;)

Original recipe makes 64
2 cupsFlour
1 teaspoonbaking soda
1/2 teaspoonSalt
1/2 teaspoonbaking powder
1 cupSugar
1 cuplight brown sugar
2 Eggs
1 cupshortening
1 teaspoonvanilla
1 1/2 cupchocolate chips; e.g., "semisweet morsels"
2 cupsoatmeal
1/2 cupchopped nuts; optional

Grandma Jo's Cowboy Cookies Preparation

Preheat oven to 375. In small bowl, mix flour, baking soda, salt and baking powder. In large bowl, cream together sugar, brown sugar, eggs, shortening and vanilla; stir in flour mixture. Fold in oatmeal, chocolate chips and nuts last. Drop by rounded teaspoonfuls onto greased cookie sheet, about 2 inches apart (we're able to fit about 12 on a regular cookie sheet, in a 3-by-4 arrangement); bake for 9-10 minutes.
